Update spring-test to Mock TestContext in Tests

A recent update in Spring Framework causes classes that use @Mock to mock TestContext to fail. Updating tests to mock TestContext with Mockito.mock allow the TestContext used by MockitoTestExecutionListener to operate correctly before each test executes.
