Always use mongodb rather than mongo in MongoDB-related configuration properties

We have a few properties that use `.mongo`:

- `management.health.mongo.enabled`
- `management.metrics.mongo.command.enabled`
- `management.metrics.mongo.connectionpool.enabled`

They should use `mongodb` instead.
