Bump minimum version of Doctrine Bundle to ^2.8

Fixes deprecation:
 - The "Symfony\Bridge\Doctrine\Logger\DbalLogger" class implements "Doctrine\DBAL\Logging\SQLLogger" that is deprecated

Fixes #1320

This also removes the last transitive dependency on doctrine/annotations
